Enriched Breads Workshop. Suitable for all but some experience recommended
Saturday 16th January 2021 (1 - 4 p.m.) £30pp
Treat yourself and the special people in your life to some delicious bread (sharing optional!). In these workshops the focus is on enriched dough, enriched with eggs, butter, milk or olive oil.
On 16th January we will be baking; Classic Cinnamon Buns, Traditional Bagels both savoury and sweet and Challah Spirals.
British Teatime Muffins and Breads. Suitable for all skill levels.
Sunday, 17th January (1 - 4 p.m.) £30pp
Traditional breads with a bit of a twist which anybody can master and guaranteed to become some of your go-to recipes.
Homemade Granary Malted Grain Bread, English Muffins for a beautiful breakfast (split and toasted with lashings of creamy butter and a lightly fried egg for a perfect breakfast offering) and Walnut and Honey Soda Bread.
Introduction to Perfect Sourdough Bread Suitable for all skill levels.
8th & 9th January 2021. £50pp
You will be provided with a shopping list and equipment, recipes and everything you need to prepare for your online sourdough workshop. These sourdoughs are made by hand and no specialist baking equipment is required. If you don't have a starter then you will need to get one going 6 days before the workshop, please state when booking and instructions for creating your starter from scratch will be sent by email.
Day 1 Making Day (1 - 4 p.m.)
Today we will cover all aspects of making perfect sourdough with step-by-step instructions on starter building, maintaining, refreshment and storing. We will use some of this starter to make a beautiful focaccia and learn the pull and fold no-knead technique to develop a traditional sourdough boule, shaping and strengthening the dough in readiness for Day 2. There will be time to make naughty chocolate chip sourdough cookies using some of the starter discarded when refreshing your starter so there is no waste.
Day 2 Baking Morning (10 - 11.00 a.m.) Ready for Lunch!
This morning master scoring the dough then baking your two beautiful sourdough loaves, cook a fabulous batch of American style pancakes while they bake!
Pains aux Raisins and Almond Croissants. Some Baking Experience Recommended.

Day 1 (1 - 4 p.m.) we will be making the dough for these beauties, laminated with plenty of butter, rested, rolled and shaped, repeat... finally rest overnight ready for baking the following morning. During a lull in the lamination process you will prepare some almond paste and vanilla custard.
Day 2 (11.00 - 11.30 a.m.) Baking Morning! Prepare to be impressed with your work, can you resist?

As we could all do with some positive distractions I have put together a few online workshops in the run-up to Christmas. We will make a selection of gorgeous seasonal breads including Christmas Stollen (make your own marzipan for the stollen), Walnut Bread Wreaths (for perfect pairing with Stilton Cheese), Wicked festive centrepiece of melted camembert, spiked with garlic & rosemary nestled inside poppyseed rolls.
